Quinoa Chicken Snack Patties

This recipe is a product of my experimentation in my quest for Nutritious and Delicious snacks and man oh man did i hit the nail on the head with this one!

Here’s how its done:


In a sauce pan, saute onions and add 1 cup of uncooked quinoa, add 2 cups of chicken broth or water and bring to boil, reduce to simmer and cover for about 20 minutes or until quinoa is cooked


To prepare the chicken breast, season w/ paprika, cayenne (if you like it spicy), garlic salt, adobo, pepper, turmeric and a pinch of cinnamon


grill in a cast iron skillet w/ a small scoop of coconut oil


dice up chicken into bite size pieces


In a mixing bowl add the chicken pieces, quinoa, scoop of greek yogurt and 2 eggs, form small patties using your hands and then roll in almond flour and place on baking sheet


bake in oven at 350 degrees for 45 minutes


Let cool and put in the fridge!
Nutritious and Delicious!!
