Turkey Meatball Spaghetti Squash Deliciousness!

I am not going to lie I was a little nervous with this one, I never cooked with Spaghetti Squash before.  Let me tell you it is so simple and delicious it will definitely become part of my weekly meal preps!!



1- Spaghetti Squash

1- Package ground turkey chop meat

1- Can La Fede crushed red tomato sauce (best canned tomatoes on the market and i am not just saying that because one of my best friends owns the company) go try it out for yourself

2- whole eggs

1 cup- almond flour

Seasonings: Grape Seed Oil, Garlic Salt, Adobo, Pepper, Parsley, Oregan

How to put it all together:

Step 1: Invite over a “friend” to enjoy the fruits of your labor, turn up your favorite music, and preheat the oven to 350 degrees

Step 2: Cut the spaghetti squash in half, drizzle w/ oil, generously rub with garlic salt and pepper, put it on a baking sheet (I always cover my baking pans it w/ tin foil to make cleanup easier) place in the oven and let it cook for 45 minutes

Step 3: Heat up a giant scoop of coconut oil in a cast iron skillet up

Step 4: In a mixing bowl; with a spoon (if you use your hands this mixture will stick to your fingers) mix together turkey chop meat, garlic salt, pepper, almond flour and eggs, you want it to take on a

Step 5: Drop 5 or 6 spoon fulls of meat into the oil, roll em around every 3-4 minutes or so until all sides are evenly browned

Note* 1 package of chop meat should yield about 6-8 balls depending on the size

Step 6: In a sauce pan on medium heat put 1 can of LaFede tomatoes and mix in parsley, Oregano, adobo, pepper and garlic sauce

Step 7: As meatballs finish their coconut oil bath add them into the tomato sauce party so they can finish cooking

Step 8: Once squash is done take out of the oven and let cool for 15 minutes, so you don’t burn your hands while working w/ it, once cooled down use a fork and start shredding the “meat” of the squash out of the skin and into a serving dish.  I was truly amazed at how quick and easy it was to do this!!

Step 9: Add sauce to the spaghetti and top w. some meatballs and fresh basil!!!

Step 10: Listen to your “friend” tell you how amazing you are!!
