Bacon, Spinach & Feta Frittata

I am the self-proclaimed god of the Frittata, this is just one of the many many ways in which I prepare my egg creations!

What you need:

12- full eggs (yes the full egg 1/2 of all the nutrients are in the yoke)

2- cups Greek yogurt

1- cup almond or coconut milk

1- package bacon cut into small pieces

2- cups spinach

1- cup feta or Parmesan cheese or both

Seasonings: Garlic salt, Adobo, Pepper, Parsley, Oregano

*This particular Frittata fed 5 people.

Add the 2 cups of spinach while the bacon is cooking, once spinach has shrunk down remove from heat and set to the side.

In a giant mixing bowl combine the eggs, milk, greek yogurt, cheese, seasonings, bacon and spinach.  Whisk together really good, this is going to take some muscle!

Pour mixture into a greased (i use pam) baking pan. Top w/ Parmesan cheese and cracked pepper.

Bake at 350 degrees for 45 minutes or until frittata starts to brown around the edges.  Note that this eggs will "rise" significantly during the cooking process.

After about 15 minutes of rest, slice that bad boy up and serve.  Typically frittatas are best served at room temperature.  Nutritious & Delicious!!!
