Baked Stuffed Chicken topped w/ Homemade Raspberry Cream Sauce

This is one of those dishes that was going to start out as a boring old baked chicken dish and then it turned into something spectacular along the way!!

Bake in a 350 degree oven for 30-45 minutes depending on the thickness of the breast. If unsure use a meat thermometer 160 degrees is optimal for a nice juicy inside!

What you need:

4- chicken breasts

4 cups of kale

1- clove garlic

1- scoop greek yogurt

1- cup raspberries

1- tablespoon agave nectar

1/2 cup- feta cheese

Start by sauteing garlic and kale in some olive oil

remove from heat and loosely mix cooked down kale w/ as much or as little crumbled feta cheese your heart desires

make an incision down the side of the chicken, you want to almost cut the chick in half, season the inside "pocket" and the outside well

Stuff the kale & feta mixture into the "pockets" of the chicken, drizzle w/ olive oil and sprinkle a handful of panko breadcrumbs to add some extra CRUNCH to the chicken.

Raspberry Cream Sauce:Whipped this up last minute in 30 seconds, add some olive oil, hand ful of fresh raspberries, touch of agave nectar, white wine vinegar and a scoop of Greek yogurt, heat over low heat stir until all raspberries are broken down and then put in the blender for a few pulses.  Drizzle over the chicken!

Whipped this up last minute in 30 seconds, add some olive oil, hand full of fresh raspberries, touch of agave nectar, white wine vinegar and a scoop of Greek yogurt, heat over low heat stir until all raspberries are broken down and then put in the blender for a few pulses. Drizzle over the chicken!
