Balsamic Pesto Salmon with a Twist

Salmon, one of the most nutrient dense fish we can consume and personally I LOVE IT!!  Salmon can be eaten raw or cooked and to be honest taste delicious both ways.  The versatility of Salmon is one of the most alluring aspects from a cooks perspective, you can literally cook it w. anything!!  This is one of the simplest and most delicious ways to cook this fish and I am sure you will love it!!  So be creative when it comes to this ingredient and don’t be afraid mix it up a bit when cooking!!


What I used:

1- Salmon fillet sliced into 6 2″ wide strips

1- cup of balsamic vinager


1- Bunch of parsley

1- handful of cashew nuts

1- juice of a lemon

1- cup or close to it of good olive oil (I prefer the LaFede brand)

Seasonings: Adobo, pepper

Step 1: place the 2″ salmon strips in a zip lock bag w/ the balsamic vinager and set aside for about an hour

Step 2: in a blender add the parsley, cashew nuts, juice of lemon, seasonings and olive oil…..start by adding the oil a little at a time you want the pesto to be more of a paste then a liquidy like mixture

Step 3: Place the salmon strips on a greased baking sheet and smear a spoon full of the pesto over each piece



Step 4: Cover each piece w. a little more balsamic

Step 5: place in a 350 degree oven for 15- 20 minutes

Step 6: drizzle w/ balsamic glaze (recipe in separate post) and serve
