Quinoa, Feta & Turkey Stuffed Peppers

Who doesn’t love a nice stuffed pepper surprise hidden in the Sunday sauce?  Well that’s exactly what I slipped into this Sundays pot when I was cooking up my meals for the week.   The recipe is slightly complex as there are a lot of separate ingredients that need to come together in order for this succulent green stuffed surprise to really make you moan!

What I used:

1- cup cooked quinoa

1- package ground turkey chop meat

1- cup feta cheese

4- sweet bell peppers

2- cans LaFede crushed tomato sauce

1- clove garlic

Seasonings: Garlic salt, Adobo, Black pepper, Oregano, Parsley

Step 1: Bring one cup of quinoa and 2 cups water to boil, reduce to simmer and cover

Step 2: Mince up garlic and put in a hot skillet add the turkey chop meat and seasonings

Step 3: Once cooked take the quinoa and turkey chop meat and place in a mixing bowl


Step 4: Add feta and 1 cup of tomato sauce


Step 5: Combine all ingredients really well


Step 6: Cut the tops off the pepper and remove the seeds


Step 7: Using a tablespoon pack the mixture into each pepper (use the spoon to push it in really tight)


Step 8: Add the remaining to cans of tomato sauce to a pot and place the peppers so they are fully submerged


Step 9: Cook, covered on low heat for 30-45 minutes or until the pepper is fork tender

Step 10: Let cool and sprinkle some more feta on top and enjoy!!!
