Grilled Chicken & Pineapple Salsa

If you are looking for a light, refreshing and quick meal to satisfy your post workout cravings then this is the dish for you.  Read my post on

What I used:

1-cup quinoa

2- cups chicken broth

4- chicken breast (sliced thin)

Seasonings: Black Pepper, garlic salt, adobo, cayenne, paprika

How I did it:

Step 1: put the uncooked quinoa in a sauce pan and heat up until the wonderful nutty flavor is released


Step 2: Add the 2 cups of chicken broth and bring to a boil, then reduce to simmer and cover, allow to cook closed for about 20 minutes or until the quinoa is “fluffy” I use a fork to check

Step 3: In a greased skillet add the seasoned chicken breast and gill for 3-4 minutes on each side or until they are cooked all the way the through (the thickness will determine how long to cook)

Step 4: Plate a scoop of quinoa, place a piece of grilled chicken on top and then finish off with a scoop of that delicious Pineapple Salsa!!
